yeh they both count. Gong is more spacey and unique and not based in canterbury but still count, Daevid Allen was an og member of Soft Machine and they had Steve Hillage who was in a bunch of bands (also in Arzachel) and Pip Pyle briefly who was in a bunch of canterbury bands too
Arzachel aka Uriel were one of the earliest bands of the scene so they were more psych than most

id say the big 5 are Soft Machine, Gong, Caravan, Hatfield and the North and National Health. but the crossover and intermingling between them all is kinda ridiculous so there are ton of side bands with like one album or solo album
other names are Egg, Kevin Ayers (solo), Daevid Allen (solo), Steve Hillage (solo), Matching Mole, Quiet Sun (with Phil Manzanera from Roxy and Charles Hayward from This Heat), Keith Tippett, Delivery, Gilgamesh
also occasional others who aren't in canterbury itself like the dutch Supersister, french Moving Gelatine Plates and Italian Picchio dal Pozzo
but still have the sound so are lumped in with them
