It does to a degree.
Your whole roll isnt invincible, only a certain point.
Cant really explain since im used to it (i think its the middle part of the roll but im not sure) but my suggestion would be to test it out on low tier mobs or knight in limgrave or sumn to figure it out.
I tested it out on the dragonkin mf. I was having a hard time at first getting in close without dying eventually. So, I just rolled in and even when I'm close as long as I rolled at the right time I wouldn't get hit like I was before.
I wish they explained this s*** at the beginning of the game though, like wtf. Making my life miserable for no reason.

Yeah.
The start n end of the roll is when its off iirc.
Because you can roll into fire n get hurt for example, or start a roll just as an enemy catches you in the beginning. Its actually a meta in pvp called "roll catching". And certain attacks just dont care about your rolling.
Just be mindful because it isnt a completely free out of jail card.
Edit: some of the game's AI like npc char are also built with knowledge of roll catching

Not even most fighting games dive into it in their practice modes n it really matters there n basically what the genre is built on, people usually have to go to outside sources because its confusing/alien to most, n other wise hard to put into standard words.

I mean I'd keep up strategically rolling out of the way of attacks (or into in some cases) bc your positioning will have you in a better space for whatever the boss has next after your roll ends
