You have a slight invincibility frame for most things (very few things dont tho) during rolls yeah.
You can also jump over stuff like earthquakes from goddrick for example, but you dont have an invincibility frame for jumps.

Like I've been positioning my rolls outside of where the attacks happen and s***. And probably was just rolling to early during the Grodrick fire s***.

It does to a degree.
Your whole roll isnt invincible, only a certain point.
Cant really explain since im used to it (i think its the middle part of the roll but im not sure) but my suggestion would be to test it out on low tier mobs or knight in limgrave or sumn to figure it out.
