happened to me once in the middle of a boss fight

It happened to me in Raya Lucaria, at the pit of the Blighttown elevator where that robot with the sawblade arms was. When I reloaded it was deaggroed so I was able to just sneak around it and get the loot
I mean I'd keep up strategically rolling out of the way of attacks (or into in some cases) bc your positioning will have you in a better space for whatever the boss has next after your roll ends
This is true for most fights. Because I don’t have much range though, before I was dodge rolling usually back or to the side then trying to get a hit in by quickly running forward then back to dodge rolling.
Now I know about the dodge roll period, I can close the distance by rolling towards them and then I’d really just need to get their attack patterns down, that way even when I’m close up I can still get my timing right and for the most part do some dodge roll out of dangerous situations.
fire is one of the only things you can’t roll through mostly
Oh then I did that fight right. I tried dodging the flames but I kept getting hit and just started getting behind him when he did that. I thought I was just timing my dodge wrong though, guess not.

I felt weirdly bad for levelling up my weapons and increasing my vigour even tho the game is balanced around assuming you've done that as it goes on, I don't know why but it feels more like cheating in an open-world setting

Im lv 116 and my vigor is at 30, tbh i feel like there is no point in levelling vigor further if I can survive 2 hits

It's my first Souls game, highly frustrating at first but watch some YouTube starter guides and put in some time and you get the hang of it. I'm now fully addicted, I think I have 30 hours in already lmao
