I would try to get at least 16 GB. Depending on the apps you're using, 8 will be frustrating to use after awhile

afaik 8gb apple silicon isnt exactly comparable to 8gb on other architectures, so don't go off those comparisons

Because, while it will be noticeable in some cases where you may actually need to store a very large single file that is close to 8GB in the main memory, very few applications on a computer require that and instead quickly swap lots of smaller files in and out of memory as needed very quickly.
The M1 has the RAM built into the SOC (essentially the processor package) so doesn’t have to rely on bus lanes and relatively slower components to swap data between the RAM and CPU. The RAM is much closer and less restricted than in an Intel or AMD based system. This makes the whole process much much faster and so the M1 makes up in access speed what most computers need more memory for.
Think of it like this. You have a 2 passenger vehicle and a 4 passenger vehicle. The 2 passenger vehicle can go twice as fast as the 4 passenger vehicle. Assuming each fills up and travels to a destination dropping off passengers and then going back to collect more, both cars will move the same amount of passengers in the same time regardless of capacity. But if you have a unique circumstance where one passenger takes the space of 4, you will struggle with the 2 passenger car.
