i kinda didnt get the memo that its just coiled once so the skin is all exposed lol but we just ate the outside coil and im gonna reheat the inside so that the skin there gets crispy too

i eanted 2 do roast beef for xmas dinner but the recipe said cook for 6 hrs and it was still like so far from done at that point that i just gave up and we had more porchetta lolll

reverse sear is almost not worth it unless u have one of those hoes
also bc my current thermometer is half busted

Reverse sear on a roast is wild doing it that way, but itโs reliable for a steak
