From what I understand I think the ending itself is still up in the air because the leaks don’t show the full ending or something like that but everything in the leaks is definitely real

A vast amount of triple A games incorporate a delay nowadays, with or without coronavirus. Using that as an indicator of their quality is frivilous.

and it's not like this is getting pushed back months when it's literally only delayed for 3 weeks, that's such an insignificant amount of time so implying that means something is a huge reach

They delayed it as they couldn't match the distribution demands required, not no reason. Its difficult to meet the physical copy requirements right now, and to distribute digitally only would mean many people who are either opposed to purchasing digitally or simply dont have the internet connection to support a download of that size would be marginalised.
They do not have no plans for multiplayer. They are working on it as a standalone thing, whether at a fee or not is undetermined. The reasoning being they needed the extra manpower to complete the single player the way they intended it. In terms of scope its the biggest game they've created.

s*** is getting delayed left right and centre, we have movies being pushed back an entire whole year right now because they can't play in theaters, and artists pushing albums back because they can't tour
game stores all around the world are closed and we have no idea, when they'll open again, like none of this s***
FF7 just had massive problems with getting its physical copies to people, and that's still a huge part of the gaming market. Like you said the game is already gold, so what possible reason would the delay be other than them wanting to maximise the game's sales potential, it's basic Business 101.
And if a large chunk of your story leaks, obviously you're gonna want to scramble to find a release date in response to that, that's a given. And if they were really unsure and worried about the game, why would they end up delaying it only 3 weeks instead of pushing it back even further? The way Sony handled the entire situation was a mess for sure, but the delay wasn't for "shits and giggles" and at the end of the day still has no bearing on the actual game
