According to the manga they were actually fighting for a while, the anime just actually showed it.
I feel Oda didn't expand upon them fighting for two reasons:
1. Time. Wano is already long af and if he showed every fight it'd probably go on for longer than he wanted.
2. It'd be boring to show what the anime showed in manga form. We've seen the two moves they used in the anime already, and Oda doesn't want to give away all of Kaido's fighting before his fight with the scabbards and later the supernovas. The anime fight was only hype because it was that animation, in reality it was short and again it was two techniques from both we seen already.

but kaido is a dragon. I dont think that qualifies as an animal and according to japanese mythology dragons are gods so I have no idea what kaido really is
I mean anything is possible. We got a sword that's an elephant. I say he's a natural dragon who ate Human Human: Oni model fruit
