Yes it would maybe be an overkill if you did only game on it. But since you're going to stream at the same time so would I say it's worth it in the long run. Also add if you maybe in the future want to edit videos or other stuff so would it be worth the investment if you ask me.
Oh and the VRAM been 8 GB's means Ultra settings (If not all then most of the games) for sure. So even gaming at 1080p is extra nice. I would personally want it to either be 6 or 8 GB's

The 3900x. My impatience got the best of me but it's ok because I won't be upgrading until the top of 2022. This will be more than enough to hold me over until then.

Yeah. You'll good for years to come. I was originally going to go with the 3700x but 6-8 cores are becoming a standard for games and this will give me more headroom. And if you're into streaming the 3900x will make a world of difference.
