Simple. Two reasons:

1. Allow casual audiences to form a deeper attachment and connection to some of the characters that won’t get as much focus if just introduced in an X-Men film.

2. Allow more mutants to get their stories adapted onto screen, not all of them have to be in the X-Men film because not every Mutant is an X-Man

Disney plus it they not doing a blockbuster night crawler or mystique movie man

Big movies cost more money and risk flopping not everything needs to be that

No, it was the point of the MCU for a long time. Giving a character a Disney+ show subconsciously makes the audience think the character is less important, also there are so many casual viewers that will never tune into those shows
