Oh I mean it certainly exists - or at least existed - of that I won't deny, but in terms of modern film workflow it's so incredibly uncommon that I find it hard to believe Kanye had a team flown out to Mexico to specifically do that, especially when the quality of the stream wasn't all that incredible to begin with.
I feel like the most likely situation here is that he did have 35mm cameras shooting the performance for a couple angles, but that those weren't actually a part of the stream, which appeared fully digital to me.
