A different pasta shape changes up the whole dish. Mouthfeel, the way the pasta sticks.
Some pasta dishes taste so much different(and worse) with a different(wrong) pasta shape.

Spaghetti/linguini
The little tiny elbow ones
Give me a pasta shape that I can easily push a fork into and not have to worry about extra steps. It all tastes the same anyways
