ooo whats ur fermentation/resting process for the dough?
So this one was 66% hydration. It got a bulk resting for 4 hours, before being seperated into smaller doughs. Then I just had it in the fridge over night and took it out 2 hours before cooking
Any of y'all tried going no processed foods only?
