chinese russian borscht and wine braised oxtails
thewoksoflife.com/red-vegetable-soup-shanghai-luo-song-tang basically this recipe but adjust to taste--i wld omit the bay leaf and add like a thumb's worth of ginger kept whole so u can fish it out easily as well as probs double the tomato (or sub a 14 oz can)
beef stock:
i just brown the oxtails in a dutch oven or something similar w oil, fish it out n pressure cook that with water for 25 min or so
u can skim the scum off if ud like
while beef stocks going, soup prep:
sear some onion n tomato paste in the pan that had the meat, remove the veg from the searing pan,
fish the meat out from the pressure cooker
for the braised oxtails:
sautee some rly thinly sliced (mandolin thin) onions in the pan uve been browning things in,
pour like 1/3 bottle of red wine in with that onion, maybe 1/3 cup of low sodium soy sauce, 1/3 cup of mirin, a pinch of sugar and some of the beef broth u just made, add most of the meat to it, cover and simmer on med-low until the soups done (aka arnd 25-35 min)
back to the soup:
dump the veg u fished out of the dutch oven earlier and all the other soup ingredients into the pressure cooker (which still has the beef stock) n pressure cook for another 25 or so min
if u want like... potatoes w more substance dump those in like halfway instead--just run the pot under cold water until the clicky thing goes down, dump em in, relock the pressure n keep goin
after the 25 min
i wld then salt it to taste, adjust anything (eg more tomato), cook for another 5 minutes or so without pressure
adjust the oxtails 2 n cook it on like med or med high after u add stuff
the soups better the next day

Korean chicken sandwich with kimchi but,,,
1: Sandwich had no flavor really
2: $22 for 2 sandwiches and a drink
3: I thought fries were included bc it was expensive but I guess not so the quality and quantity of food was overall bad
