Highly recommended marinating chicken thighs in soy sauce if Any of you haven’t tried it. Doesn’t impart too much salty flavor and keeps the meat extremely juicy. I’m gonna try fish sauce tomorrow and see if there’s a difference

Make chimichurri and marinade it in that.
