Nowhere did it make clear that all animals are also in the hivemind. In the first episode, it seemed that one scientist realised what the signal was and how to maybe utilize it. (My guess is that it was sending out some sort of code to altering dna)
Then, later we see a lab with rats being used for testing (as humans tend to do, animal testing first), I can only guess it's where they were altering the dna of animals (rats are often used in animal testing/studies) according to the sequence they received from the broadcasted signal.
This part may be a strest, but say the entity is ultra intelligent, maybe even all-knowing in a sense so it played dead until it found a way to infect the human in the lab, and from there we saw what happened with it spreading to all humans.
All this to say, we do not know that all animals are part of the hive and sharing memories and all that with all other humans and other life forms (yet).
The lunch scene points to the animals not being connected as well. when asked if they would swat away a wasp or avoid stepping on ants, they said they would just try to avoid them. If the animals were a part of the hive they would just move in harmony. Also in the plane when the woman mentions trying to shoo away the giraffe, if the giraffe was a part of the hivemind it arguably would've moved away at her command.
For me this does feel like not much is happening. I know a lot did. But it does feel slow for me. I felt the same with BCS on first watch. Then went on to pretty much tie with BB for greatest show of all time for me. Sometimes even surpassing it in some aspects.

She might be grumpy, but her overall objectives are pretty selfless — trying to “save” humanity, overcome this virus, pretty strong morals (wants to make sure no one gets hurt, even if they are Others, and has deep stress whenever she accidentally leads to others getting hurt when they glitch because of her)
