snapping at somebody to do something is a blatant sign of disrespect, especially if it's from somebody you just met. Manousous was already being rude to her so she had to set her boundaries to clarify how their relationship would proceed. that action was completely justified
for me the most unlikeable Carol has been all season is later in the episode when she's given up on humanity and enjoying ski trips with her fake girlfriend until she learns she's not safe like she thought and decides to throw her cape back on
that was the pure selfishness that she got mad af at the other survivors for earlier in the season

Well she also has been alone for 40 days straight. A grief stricken person being alone for that long is going to do serious psychological damage (as we saw during that fireworks sequence)
