what do all those knobs even do

see when you zoom in and it has the labels by the knobs ? the rest is basically the leveling of that select isolated sound, the channeling of left ear to right ear, the effects + leveling of the effects (eq and reverb would be higher on the isolated vocals for travis in particular)

most of them arent significant though mike dean knows which ones he needs specifically for what mix he has in mind

mike dean uses a neve console but does 90% of the mixing in the box (pro tools) and then sums everything through the neve at the end because it gives him a little more headroom to make s*** louder and i think he said it “glues” stuff together a little better
