Uhh you’re not necessarily gonna miss much because Peter isn’t really in Miles, it’s his own game

But the first game is a lot longer and it kind of sets up miles in a small way

In my opinion Miles has a better story tho

Ghost of Tsushima has difficulty settings so that shouldn’t be a problem. Demon Souls ( and the rest of the souls games ) isn’t as hard as people make it out to be, once you learn how to play it’s much more manageable
