I’m copping my first switch today. Which game should i start with? Leaning towards pokemond diamond or pearl but what yall think?

If you're craving Pokemon, then yeah, that's the better choice between Lets Go, Sword/Shield and Diamond/Pearl.
Otherwise, I'd reccomend Zelda BOTW and Super Mario Odyssey always.
