1. easier to spread than cold butter so you dont have to soften butter say for a midnight grilled cheese
2. creates a crispier crust on the bread
3. gives the bread more flavor than just butter
you can even add butter to the pan first and then fry the mayo'd bread on top of the butter to make it even better.
