The green colorgrading in the original matrix was a cinematic device to signal to the audience that the Matrix is separate from the reality

In the new sequel this distinction needed not to be made because the audience is fully aware that these are different.

And even if these color differences affected the people in the Matrix too then we saw at the end of Revolutions how Sati colored the sky in full color and hence everything been full color since

Neo being revived in the new Matrix in a new modal that is designed to look “life-like” will ofcourse look more vibrant to match our reality. That’s how he is even tricked that the video game he supposedly made was fake and “this reality” he currently inhibits is realer than real
