I think it ties into the idea of Marty trying to control his life, and control the poor perception of ping pong by being a sort of peacock. Maybe if I make the ball orange people will give me the respect I deserve! It's like him complaining about his hotel room. It's a bid for status. The fact that they get dumped out of a window and never mentioned again is not an accident. It's an intentional subversion. It's saying... you don't get to control the narrative, Marty.
