Kanye probably juggling features like should he put Eminem on Jesus Lord or Ozzy Osbourne is ok, instead of actually recording normal verses for every song.

They need to have a proper record to mix and master, which can take a few decades, now, considering Kanye's investment—maybe a world tour of the most famous stadiums can help him resolve his artistic issues?

It really depends, it can take days to properly mix and master a single song as an engineer will need to take breaks between mixing sessions to refresh their ears, they will typically jump between different tracks on an album in order to not exhaust themselves on a single track for too long,

the amount of multitracks makes a big difference on how long mixing takes, but probably the most important thing is how good the initial recordings are, if they’re recorded well a mix engineer may not need to do much or anything to fix them up and a bad recording can be a nightmare of trying to minimise frequency, phasing and tonal issues in the mix, but since kanye’s instrumentals are probably mostly midi it should be a pretty smooth mixing process for the most part
