Medium rare
I sear my steak medium rare with rosemary and garlic, adding butter to the pan and basing the steak, I tilt the pan up so I use the oil and juices to render the fat on the steak.
it's not raw
But why even eat it at all at that point? Isn’t it super dry and bland tasting?
