If u want a more closer experience to ER it would def be DS3 or Demons Souls remake. Elden ring still has its own unique difference but thats the closest.
Blooborne is what i personally started out with tho n now ive played n beaten them all except Demons Souls n currently playing Elden Ring. I took a leap of faith as well because the previews looked so damn good to me.
They are all tough tho n have their own difference minor or major, theres really not a "beginner friendly one", u just gotta jump, theyre all similar in regards to difficulty. Sekiro is just almost completely different as a game in terms of combat & structure tho, but similar level design n world building.
Sekiro imo is the hardest, Dark souls 2 n 1 are the easiest (still difficult). Bloodborne, Dark souls 3 n so far Elden Ring in the middle.
Its all different for everyone tho, but in general Bloodborne , Sekiro n dark souls 1 are considered hardest, Dark Souls 3 middle n Dark souls 2 lowest. ER is either hardest to middle atm.
Long explanation but i hope it helps n makes kinda sense. Basically just start out with whatever is the most interesting to you, because the more youre actually into it, the more youll push yourself to get better n stick with it.

I consider myself a Soul vet. I can’t beat Margit. I don’t want to use summons. But phase 2 keeps f***ing me because of the patterns switching up when I least expect it. Also I’m relying mostly on parrries which isn’t hard but it’s frustrating me. I keep getting so close then dying because he decides to loop through quick daggers (I’m playing as prisoner)

Spirits are good, its how i won 4th try. Saved them for the 2nd phase, summoned as a distraction here n there even tho they did barely any damage n won.
If youre against spirits even tho its a main mechanic you literally just gonna have to get good, this game is crazier than the others. Its sekiro n bloodborne level. Sometimes even more.
Also having a 100phys shield helps a lot. Thats how i defeated the next boss Goddrick 5th try.

There isnt any op spirits till late game or until you level them up a lot later on, theyre just distrations and damage absorbers that last a bit
