    In terms of IBS, it's possible that you may not see worsening symptoms after eating "shitty food". IBS doesn't necessarily worsen with unhealthy food in all cases. Stress and anxiety can indeed exacerbate the symptoms of IBS, and there's a significant link between mental health and gut health due to the gut-brain axis.

    The brain fog, dizziness, and neck tension could be signs of chronic stress or anxiety, or could indicate issues such as chronic fatigue syndrome or fibromyalgia. The increase in blurriness/loss of memory when drinking alcohol could be a sign of alcohol intolerance, or it could be an indication of overall high stress levels.

    Hypoglycemic episodes, if that is indeed what they are, could indicate an issue with glucose regulation. However, your bloodwork was fine, and diabetes-focused tests did not show any abnormalities, so it's difficult to say.

    Consider being checked for food allergies or intolerances, and consider a test for celiac disease. Sometimes, digestive issues can be a result of an intolerance or allergy that has gone undetected.

    Lastly, you might want to consider looking into psychiatric or psychological causes. Mental health conditions such as anxiety or depression can sometimes cause physical symptoms.

    You'd be surprised how much anxiety plays a role in some of these symptoms. You sound like me when I was at my peak level of anxiety/stress several years ago. I would get panic attacks so bad that I would pass out briefly. Heart palpitations, constant issues with my stomach, headaches, back pain, incredibly tense shoulders and neck, etc. Blood tests, x-rays and so on would all come back normal as hell.

    Then, you hop on WebMD and everything points to cancer or something else extremely debilitating, perpetuating the cycle of anxiety and the symptoms that come with it. I'm not saying this is certainly the case for you, but if I were you I'd continue the testing to be safe and put you at ease. Just keep in mind that it could very well be more mental than physical.
