ok so technically Hell Train arc lasts until the very end of s2, but there are 2 or 3 minor arcs when they get off and explore different stations for different reasons.

imo yes, it gets a good bit more interesting and entertaining when they bring in a bunch of new & old characters like right after where you’re at.

Watch them after Bake since that's the book order. They make references and give some hints about the events of Kizu in the later seasons so you could try and piece together the mystery but it's probably best just to watch em after Bake since that's what the author intended. Both viable options though.

Finally started reading stone ocean. Loving the setting, its crazy how araki can manage to build an interesting story in a relatively small setting, gotta give him props for that. Jolyne is one of the most interesting jojos so far, the stands are creative as always and i like where the story seems to be heading.
