gundam & eva are pretty similar in the sense that they're both mainly about the characters & politics and less the mechs so if ur only in it for the mech fights then.....

haven't seen iron blooded orphans yet but the best gundam shows imo are og show, zeta, war in the pocket (only 6 episodes), turn a, wing, thunderbolt, and 00

there is mobile fighter g gundam if you're really into shonen but it's not as good as the ones i've listed above. fun watch tho

nah ms team and war in the pocket are two different shows lol

the numbers represent the timeline ur watching so for instance, if you're watching the first gundam (0079) you would be in the universal century. the order for that would be

mobile suit gundam -> mobile suit zeta gundam ->mobile suit gundam zz -> char's counterattack

war in the pocket, ms team, and stardust memory are also in this timeline but they aren't necessary to watch to understand the story they're more like bonus watches (although i would recommend watching war in the pocket cause its pretty much the best representation of gundam's anti-war message)

it seems confusing at first but you'll get the hang of it lol

I never really got to check the earlier gundam stuff, grew up watching wings > seed > 00 are the equivalent of my childhood cartoons
