EinfinetI just started code geass after getting caught up on AoT and I was not expecting so many shared motifs between the shows, but perhaps that’s a given for shonen
While they aren’t my favorites, I think Serial Experiments Lain and Haibane Renmei are two of the more original shows I’ve come across so far. Made in Abyss too (still gotta see the second season)

Punish leeI think people don’t really watch niches anime or trash anime like that. They tend focus what popular and hot of day that going mainstream. I feel most people don’t follow any manga past work or other genre. They just eat it up what hot.
Same in any other hobby there are the majority who consume popular things and the minority who dig deep and watch obsecure stuff
