u dont want lean beef for sure, 70/30 is a good meat/fat ratio
go to is ground chuck. if u wanted to be a lil fancy u could do a blend of chuck, round, brisket, short rib etc.
up to u on size/style of patties. if u wanna smash em don't make them so big. if u just wanna cook em regular, a 3rd of a pound is a nice size.
cooking is ez, preferred method is grill but on a pan on a stove is good, u wanna cook it till u start to see juices coming out of the top. use a meat thermometer if u want, u dont want to undercook it too much unless u really trust ur butcher
